Prep time: 11 minutes

Cooking time: 18 minutes

Ingredients:

Noodles

  • 16 ounces of dry fettuccine pasta

Chicken

  • 1 pound of boneless, skinless chicken breasts
  • ¾ teaspoon kosher salt
  • 1 teaspoon of Italian seasoning
  • ¼ teaspoon pepper
  • 1 tablespoon of butter
  • 2 tablespoons of extra-virgin olive oil

Sauce

  • ¾ teaspoon of  Italian Seasoning
  • ½ cup of butter – cut into large cubes or slices
  • 2 cups of heavy whipping cream
  • 1 clove of minced garlic 
  • ¼ of teaspoon pepper
  • ¾ teaspoon of garlic powder
  • ¼ of teaspoon salt
  • 2 cups of freshly grated Parmesan cheese

Instructions

  1. Make the noodles. Bring a large pot of salted water to a boil to make the noodles. Add the fettuccine and cook it until it is al dente, which usually takes about 10 minutes. Save 1/2 cup of the water used to cook the pasta, and then drain well. Set aside.
  2. Get the chicken ready. Season chicken breasts with salt, pepper, and Italian seasoning.
  3. In a large pan that doesn’t stick, heat the olive oil over medium-high heat. Once it’s shimmering, move the pan around to spread it out evenly. Add the chicken and leave it alone for 5 to 7 minutes until the bottom is golden brown. Flip them over and put 1 tablespoon of butter in the space between them. Give the pan a gentle swirl to spread the butter. Keep cooking for 5–7 more minutes.
  4. Move the chicken to a cutting board and let it rest for 3 minutes. Cut into slices that are 1/2 inch thick. Use foil to make a tent while you make the sauce.
  5. Make Alfredo sauce: In the same pan, melt the butter over medium-low heat by whisking the cream and butter together.
  6. Add the garlic powder, minced garlic, Italian seasoning, pepper, and salt, and whisk until smooth.
  7. Bring to a slow simmer (don’t let it boil), and whisk constantly for 3–4 minutes until it starts to thicken.
  8. Just until the cheese is melted and the sauce is smooth, stir in the Parmesan. (If the sauce is too thick, thin it out by adding a few tablespoons of the pasta cooking water at a time.)
  9. Assemble: Remove the sauce from the heat and toss it right away with the cooked fettuccine.
  10. Place a few slices of chicken on top of the pasta in each bowl. If you want, you can add parsley, more Parmesan, and black pepper as a garnish. Enjoy!

  • 1-1.5 cups of shredded mozzarella cheese

Ingredients:

  • 1 pound of ground chicken
  • 1 packet of taco seasoning
  • ½ cup of salsa
  • 1 large egg
  • 4 ounces of cream cheese
  • 2 tablespoons of sour cream
  • 1 package of refrigerated 8 biscuits of Grand’s Biscuits 
  • 2 cups of crushed Nacho Cheese Doritos, about 1 bag
  • Queso for serving

Instructions:

  1. Turn the oven on and set it to 375 degrees. Wrap parchment paper around a large baking sheet.
  2. Add the ground chicken to a medium saucepan and cook it over medium heat, breaking it up as it cooks. Once the meat is done, add 1 tablespoon of water and the taco seasoning. Mix to cover.
  3. To the pan, add the cream cheese, salsa, and sour cream. Stir the cream cheese often as it melts.
  4. Take the biscuits out of their box and flatten them between your palms. They should be around 5 inches across.
  5. Put as much of the chicken mixture as will fit in the middle of each biscuit. Be careful not to overfill. Fold the dough in half to make a half circle, and pinch the seams tightly shut.
  6. In a shallow dish, whisk together the egg and 1 tablespoon of water. Crush some Doritos and put them in a second shallow dish.
  7. Place the crushed Doritos in a second shallow dish.
  8. Dip each biscuit in the egg, and then roll it in the Doritos to cover it. Put on the sheet for baking.
  9. Bake for 15–18 minutes, or until the top is golden brown and the center is done.
  10. For dipping, serve with queso.

6. Mini Chicken Pot Pies

It has everything you love about a chicken pot pie, but it’s small, which will be perfect for your kids! There’s something so cute about little pot pies. These pot pies are not only very cute, but they are also very tasty. What’s not to like? The crust is flaky and the chicken filling is warm.

Prep time: 10 minutes

Cooking time: 15 minutes

Ingredients:

  • 3 tablespoons of butter
  • 1 tablespoon of dried minced onion
  • 3 tablespoons of flour
  • 1 cup of chicken broth, + 1 tablespoon*
  • ⅓ cup of milk
  • ¼ teaspoon of salt
  • ¼ teaspoon of pepper
  • ⅛ teaspoon of celery seed
  • ½ cup of frozen peas and carrots
  • 1 cup of chicken, cooked and chopped 
  • 1 (8-ounce) can of crescent rolls
  • melted butter

Instructions: 

  1. Set your oven’s temperature to 375 degrees F. Grease a muffin tin very well in 8 spots.
  2. Melt butter in a medium skillet. Add the dried onions when the oil is hot and let them cook for about a minute. Add the flour and mix for a minute with a whisk.
  3. Whisk in the chicken broth and milk slowly, not all at once. Remove any lumps with a whisk.
  4. Add pepper, salt, and celery seed.
  5. Mix in the chicken, peas, and carrots. Put out the fire.
  6. Roll the crescent dough out flat. Use your fingers to quickly glue the triangles back together. The dough was then cut into 16 squares (see photos). A pizza cutter is good for the job.
  7. Put one of the squares in a muffin tin. Add 1/8 of the chicken mixture to the top. Put another rectangle on top. If you can, use your fingers to seal it together, but don’t worry too much about it. Do the same with the rest of the dough.
  8. Put a hole in the top of the pie with a knife.
  9. About 15 minutes at 375 degrees. You want the tops to be nice and brown so you can tell the bottoms are done.
  10. If you want, you can brush it with melted butter. Serve right away!

7. Chicken Alfredo Gnocchi

Gnocchi is another pasta dish that I’m sure kids will love. It’s similar to spaghetti, alfredo, and mac and cheese in that it’s easy to make and everyone likes it. These dumplings will be a hit because they are soft, pillowy, and chewy.

Prep time: 10 minutes

Cooking time: 15 minutes

Ingredients:

  • 1 package of shelf-stable gnocchi
  • 2 cups of frozen broccoli
  • 1 tablespoon of minced garlic
  • 1 cup of shredded mozzarella cheese
  • 1 – 15 ounce jar of Alfredo sauce
  • 2 cups of shredded/chopped cooked chicken
  • ½ cup of crumbled cooked bacon
  • ½ cup of shredded Monterey jack cheese
  • freshly grated parmesan cheese, green onions, and extra bacon
  •  Garnish (optional)

Instructions: 

  1. Set the oven temperature to 400 degrees. Use the non-stick baking spray to coat a casserole dish.
  2. Follow the directions on the package to cook the gnocchi. Drain.
  3. Mix the cooked gnocchi, broccoli, cooked chicken, bacon, garlic, and Alfredo sauce together in a gentle way.
  4. Pour into the casserole dish that has already been prepared and top with the shredded cheese. Bake for 20 minutes.
  5. Broil for 1 to 2 minutes or until the cheese starts to brown. Keep an eye on it because it will turn brown very quickly.
  6. Top with freshly grated Parmesan cheese, green onions, and extra bacon, if you want, and serve right away.

8. Baked Popcorn Chicken

This popcorn chicken is so addicting that even adults won’t be able to stay away from it. It’s so crunchy, tender, and full of flavor that you’ll pop each piece in your mouth like popcorn.

Prep time: 45 minutes

Cooking time: 25 minutes

Ingredients:

  • 1 ½ pounds of boneless skinless chicken thighs – cut into 1-inch chunks
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • ½ teaspoon of dried thyme
  • ¼ teaspoon of cayenne pepper (optional) 
  • ¼ cup of melted unsalted butter
  • 3 cloves of smashed garlic
  • 3 cups of crushed Sour Cream & Onion – Kettle Brand Potato Chips
  • 2 cups of low-fat buttermilk
  • 2 tablespoons of chopped fresh parsley leaves
  • Kosher salt and freshly ground black pepper

Instructions:

  1. Get the oven ready at 400 degrees F. With nonstick spray, coat a cooling rack and set it on a baking sheet.
  2. Mix the chicken, buttermilk, garlic, basil, oregano, thyme, cayenne pepper, salt, and pepper to taste in a large bowl and let it sit for at least 30 minutes. Drain well.
  3. Working in small batches, press the chicken down into the crushed potato chips to coat. Place on the baking sheet that has been prepared, and drizzles with butter.
  4. Put in the oven and bake, turning the pieces halfway through, for about 20 to 25 minutes or until they are crisp and cooked all the way through.
  5. Serve right away with parsley on top if you want. Enjoy!

9. Chicken Noodle-Soup

Chicken noodle soup is the most comforting thing your kids can eat. One spoonful of this comforting dish is like a big hug, a cheerleader, and a shoulder to cry on all in one. It has egg noodles, chicken, vegetables, and a creamy broth.

Prep time: 5 minutes

Cooking time: 35 minutes

Ingredients:

  • 2 tablespoons of butter, chicken fat, or olive oil
  • 1 large chopped onion
  • 2 large chopped carrots 
  • 2 stalks of chopped celery (optional)
  • Heaped tablespoon of minced garlic (4 cloves)
  • 2 bay leaves
  • 3 sprigs of fresh thyme or use 1/2 teaspoon of dried thyme
  • 1 pound of skinless, boneless chicken thighs (4 or 5 thighs)
  • 8 cups of chicken stock or broth
  • 5 ounces of egg noodles (or pasta of choice)
  • Salt and pepper
  • 1/4 cup of fresh, finely chopped parsley
  • Water or more stock – as needed

Instructions:

  1. Over medium heat, melt the butter in a large pot or Dutch oven. Add the carrots, celery, and onions. Cook the vegetables, stirring every few minutes, for 5 to 6 minutes or until they start to get soft.
  2. Mix in the thyme, garlic, and bay leaves. Cook the garlic for about a minute while moving it around the pan.
  3. Pour the chicken stock in and turn the heat down to a low simmer. Taste the soup, and then add salt and pepper to taste. Adding 1 or more teaspoons of salt may be needed, depending on the stock you use.
  4. Put the chicken thighs in the soup so that they are covered with broth. Bring the soup back to a low simmer, then partially cover the pot with a lid and cook while stirring a few times for about 20 minutes or until the chicken thighs are fully cooked.
  5. If the broth seems low during this time, add a splash of more stock or a bit of water. The heat should be set to medium-low.
  6. Put the chicken on a plate after it has been cooked. Mix the noodles into the soup and cook for 6 to 10 minutes, depending on the type of noodles.
  7. While the noodles are cooking, cut the chicken into thin strips or cubes. Put the chicken back in the pot and taste the soup again to see if it needs more salt. Depending on what you like, add more salt and pepper. Add the parsley, stir, and serve.
