  • 2 small onions, chopped
  • 4 cloves garlic, minced or grated
  • 2 lbs of ground beef
  • 2 poblano peppers, seeded and chopped
  • 1 tbsp. chili powder
  • 1 tbsp. smoked paprika
  • 2 tsp. ground cumin
  • 1 ½ tsp. ground cinnamon
  • 1 1/2 tsp. salt
  • ½ tsp cayenne
  • 2-3 cups low sodium chicken broth
  • 1 (28 oz.) can crushed tomatoes
  • 1 (8 oz.) can tomato paste
  • 2 tbsp maple syrup
  • 1 bay leaf
  • cheddar cheese, avocado, green onions and cilantro for serving

Directions

  1. Add olive oil to a large pan over medium heat. Then, add onions and sauté for about 5 minutes until they begin to brown or caramelize around the edges. After this, add the garlic and cook until fragrant, which takes about a minute.
  2. Add the ground beef to the pot and brown it. When you cook your beef, make sure to break it up as you go. This may take around 8 minutes.
  3. Once you’ve browned the beef, add the poblano pepper, chili powder, and spices to the pan. Stir well and let it simmer for a couple of minutes. After this, remove the pan from the heat.
  4. Place the beef mixture in the crockpot bowl and add 2 cups of chicken broth, crushed tomatoes, tomato paste, maple syrup, and bay leaves. Stir well and cover the slow cooker.
  5. Cook on low for 6 to 8 hours. If the chili becomes too thick, you can add the leftover chicken broth to thin it out. Adjust based on your desired consistency
